SWEET POTATO & CHICKPEA SALAD + CRISPY SHALLOTS

SWEET POTATO & CHICKPEA SALAD + CRISPY SHALLOTS

Hello again!

It's been two weeks since I've been here and I'm so happy to be back. Today I've brought with me a salad that I think you'll love as much as I do. As a food blogger, I tend to skip around a lot but I've made this a few times over the last few weeks which means it must be pretty darn good. It's one of those salads I find myself craving. I'm totally in love with sweet potatoes at the moment (and forever more) and they are great in salads. The crispy shallots take it to another level. Truth is crispy shallots equal awesomeness! And the simple lemon tahini dressing adds a creaminess making this a salad dream come true. At least for me anyway, I love creamy dressings! There's nothing wimpy about this salad either. It's a perfect warm salad to keep you cozy and happy. I've also got plans for another sweet potato salad coming your way soon...it'll have a Thai peanut dressing. Oh yes, and its soooo good! But in the meantime, I urge you to pick up everything you need for this salad and get on it, pronto!

Follow my kitchen on Instagram. It's where I share most of my daily meals and inspiration with a sprinkle of randomness thrown in. I'd love to have you join me!

SWEET POTATO & CHICKPEA SALAD + CRISPY SHALLOTS

Ingredients
  • 1 large sweet potato, diced
  • 1 cup cooked chickpeas
  • 1 large shallot, sliced
  • 2 tablespoons olive oil, divided
  • garlic powder
  • chili, chipotle or smoked paprika powder
  • pink salt
  • leafy greens of choice (I used baby kale)
  • pepitas (pumpkin seeds)

Simple Lemon Tahini Dressing
  • 3 tablespoons tahini
  • juice of 1/2 medium lemon
  • 2-3 tablespoons water, + more as needed
  • pink salt, to taste

Preheat oven to 400F.

Roast: Place sweet potato and chickpeas on a large rimmed baking sheet lined with a silpat, parchment paper or lighlty greased. Drizzle with oil, toss to coat. Sprinkle a few dashes of salt, garlic and chili powder of choice over top. Place in oven and roast for about 25 - 30 min, stirring once half way through, potatoes will be ready when they are fork tender. Ovens vary so your cooking time may be more or less.

Crispy shallots: Heat remaining oil in a small/medium pan over medium heat, add shallots and cook for about 5 minutes stirring frequently. Lower heat to medium low and cook the shallots until nicely browned, about another 5 - 10 minutes. Once browned to your liking, remove from pan and set aside on a paper towel lined plate (if you leave them in the pan to cool, they may cook a bit more (possibly overcook) since the pan will still be hot). Sprinkle with a little salt and pepper if you like.

Dressing: Place the dressing ingredients in a small bowl, mix well and add a more water as needed to thin. Set aside.

To serve, add leafy greens to serving dish/plate, top with 1/2 of the roasted sweet potatoes and chickpeas along with 1/2 of the crispy shallots. Add a sprinkle of pepitas over top and drizzle with 1/2 of the dressing. Add a squeeze of the remaining lemon half over to if you like!

Serves 2.

QUINOA CHILI VERDE

QUINOA CHILI VERDE

Here I am again with another recipe for the Soups, Stews & Chilis collection (I just can't help myself!). This recipe has been in the works since December and I'm finally getting around to adding it to the collection. The poblanos and tomatillos have been sitting in my refrigerator for long enough (not since December though lol). So without further ado, I share with you my recipe for Quinoa Chili Verde. It's a hearty and brightly flavored chili. The tomatillos are what brighten this chili with their citrus notes. I've added just enough herbs and spices to be noticed, I didn't want to overpower it, but you can add more if you like. I used a flavorful vegetable broth so if using water you'll most likely want to up the amounts to suit your taste. My first attempt at this I added tempeh but for this recipe I've left it out. It wouldn't hurt to add a package when combining everything while crumbling it between your fingers. Tempeh will make it that much heartier (and its an excellent soy product for most!). I also added some corn which adds color and a nice sweetness. For the beans, you can use any mix. I would stick with any mix of cannellini, kidney, pinto or black. This chili is a one pot wonder and will be ready in under an hour from start to finish. You can be sure this green quinoa chili is going to be a nice departure from the usual chili routine. Round up your ingredients and give it a try!

QUINOA CHILI VERDE

I know tomatillos and poblanos are in season and abundant during the summer months, but here in California we have them year round tempting me every time I see them to take them home and make something wonderful. Corn is the only ingredient in the recipe that isn't fresh year round so I used 1 cup frozen. Hopefully you can find all the produce in the winter months with ease or you'll have to wait for the warmer season.

QUINOA CHILI VERDE

The only thing you have to chop and dice are the onion, peppers and tomatillos. I left my tomatillos on the chunky side, they will soften and fall apart, but you can dice them up as small as you like.

Get ready, gather your ingredients and start cooking!

QUINOA CHILI VERDE

QUINOA CHILI VERDE

Ingredients
  • 1 tablespoon olive oil or 3 tablespoons water
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • 1 heaping teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 12 oz tomatillos, diced or quartered or 1 can (15oz) crushed
  • 2 poblano or Anaheim peppers, de-seeded and diced
  • 1 corn off the cob or 1 cup frozen or canned sweet corn
  • 1 can (15 oz) cannellini beans or pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup dry quinoa
  • 4 cups vegetable broth
  • salt to taste

optional garnish

In a large pot or dutch oven, heat oil/water over medium heat and sautee onions until softened, about 5 minutes. Add garlic powder, oregano, cumin and chili powder, cook for 1 minute more stirring frequently, or just until spices and herbs become fragrant. Add tomatillos, poblanos, corn, beans, quinoa and vegetable broth, bring to a boil, cover, reduce heat to low and simmer for 30 minutes. Remove from heat, uncover and let rest about 10 minutes before serving.

Serve in individual bowls topped with garnish of choice. Pairs well with corn bread too, either on the side or broken up in your chili!

Serves 4 - 6.

Notes:

Add in a package of organic tempeh for added hardiness. This Three Grain Tempeh is my favorite flavorwise.

You can rinse your quinoa if you like. I honestly usually skip this step but if you prefer you can run the quinoa under cool running water using a fine mesh seive.

Adjust the spices to your taste. If using broth you may like it as is, if using water you may like to add more.

This can also be made in the crock pot/slow cooker, add all the ingredients, cover with the vegetable broth and cook on medium or medium-low for 4 hours.

BLACK BEAN FAJITAS + GUACAMOLE

BLACK BEAN FAJITAS + GUACAMOLE

Happy Friday to you all! For most of you, your work week is ending and you’re ready for some days off. Today I hope to inspire something wonderful for you to eat on your time off. I've always loved fajitas and if you’re like me you love them too. Finally, they have arrived to the recipe collection and I'm so happy to share them with you!

I was so excited the day I was going to put this together, trying to do my full workout at the gym, just knowing I would be coming home to put this recipe together. I imagined a flavorful fajita mix with a big helping of guacamole on top. At last minute I added some shredded cabbage I had on hand, but that is optional. They are everything I wanted them to be and more! These are 'Eat like you mean it' tacos! I loaded mine and ate them just as you see here with no problem at all, hardly any mess either. Although the next couple tacos I had were a bit messier, just because I was at the bottom of the fajita mix where all the juiciness is. Not a bad thing at all, just be sure to have a couple extra napkins handy, and just like your mom might have told you, 'Eat over your plate'. I especially love making tacos, mainly because I love corn tortillas, but if you prefer flour tortillas, your options are open for making tacos or burritos (see notes). However you like, gather your ingredients and get ready to enjoy some of the best darn black bean fajitas you've ever had! At least I think they're pretty darn good. :)

Black Bean Fajitas + Guacamole

Just simple, colorful ingredients that come together in the best way. If you're lucky enough, you may even find a prepared fajita mix where you just add your spice and protein. That's exactly what I have here, 2 packages, but the ingredients will reflect buying and slices your own bell peppers and onion. The tortillas I used are homemade tortillas from Trader Joe's. They are thick and can withstand a large helping.

Start with your guacamole. This is a very simple, classic chunky guacamole. I added chopped cilantro just before serving. Feel free to omit/add anything you like!

Black Bean Fajita Tacos + Guacamole

Layer your tacos and serve you & yours some hearty black bean fajita tacos!

Black Bean Fajitas + Guacamole

BLACK BEAN FAJITAS + GUACAMOLE

Ingredients
  • 2 cans (15 oz.) black beans, drained and rinsed (about 3 cups)
  • 1 red bell pepper, cored and sliced
  • 1 yellow bell pepper, cored and sliced
  • 1 green bell pepper, cored and sliced
  • 1 small white onion, sliced
  • 1 tablespoon grapeseed or olive oil or 3 tablespoon water (for water saute)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/4 - 1/2 teaspoon chipotle or cayenne powder, optional
  • 1/2 teaspoon mineral salt
  • corn or flour tortillas
  • 1/4 head of cabbage, shredded (optional), to serve
  • lime wedges, to serve

Guacamole
  • 2 - 3 avocados
  • 1 small jalapeno, most seeds removed and diced
  • 1/4 red onion, diced
  • small handful cherry tomatoes, quartered or 1 small tomato, diced
  • 1/2 teaspoon mineral salt, or to taste
  • few sprigs cilantro leaves, diced
  • 1 lime, squeezed

Start with your guacamole. Cut avocados in half lengthwise, remove seed and using a spoon scoop out the flesh, place in medium size bowl. Using a fork cut the halves into large chunks and mash about 1/3 - 1/2. Add diced jalapeno, onion, tomatoes, mineral salt and lime juice. Mix to incorporate. Add in chopped cilantro and mix again gently. TIP: To keep your guacamole from browning, pack your guacamole well, add about 1/4 - 1/2 inch water over top and place in the fridge. When ready to serve, drain water, mix and serve. This will keep air away preventing oxidation.

In a large wok/skillet, heat oil or water over medium high heat. Add bell peppers, onions, and spices, cook for about 3 minutes, stirring occasionally. Add black beans and cook until heated through, about 3 more minutes. Adjust seasoning to taste adding anything extra you like.

Warm your tortillas. I like to heat mine carefully over the open flame of the stove top.

Serve layering the fajita mix on top of each tortilla, then add cabbage and a nice helping of guacamole. Add a squeeze of lime to each taco if you like.

Serves 3 generously.

Notes:

These can easily double as burritos by simply using large flour tortillas. Layer just as you would the taco leaving about 2 inches at one end, fold up the end over the mixture, take one side of the burrito, fold over and roll. This style will leave you with one open end at the top. It's the way I usually make my burritos. For a completely closed burrito, take a look at this tutorial from the Kitchn: How To Wrap A Burrito (So It Doesn't Fall Apart When You Eat It!)

I read about the water trick for the guacamole from an article at Huff Post Taste: How To Make The Best Guacamole: Tips and Mistakes To Avoid

The Ultimate Tempeh Chili

The Ultimate Tempeh Chili

I've wanted to do a tempeh chili for a while now, and with the temperatures steadily on the low here in So Cal it's the perfect time of year to bring out the chili recipes. Tempeh makes for a great addition to any chili giving it an extra hearty feel and enhancing the protein & fiber content. With almost 20 grams of protein per 100 grams (about 3.5 oz.) of tempeh, add that to the high protein beans called for in this recipe and you've got yourself a great high protein chili to keep you feeling full while meeting your daily protein requirements easily. I've been trying to incorporate an extra dose of protein into my diet lately without having to use protein smoothies and this chili has been on my weekly rotation. I've played around with the recipe and have kept it fairly simple. Please keep in mind that tempeh is a soy product, and although it is a good soy product for you unlike some soy products it is best in moderation...once or twice a week is fine. You can feel good about having this once a week or every now and then. Gather your ingredients and make yourself a bowl of chili that will warm you up and keep you feeling great!

The Ultimate Tempeh ChiliThe Ultimate Tempeh Chili

I did include a bottle of dark beer and loved the flavor it gave it. This Negra Modelo is perfect for cooking with and it's vegan friendly! This can be optional but well worth the added flavor, it rounds out the chili beautifully making it one of the best chili's I've ever had. The alcohol will for the most part burn off while simmering leaving the delicate characteristics behind. If your looking to minimize the alcohol content, take a look at the Alcohol Burn Off Rate Chart to find how long you should simmer your chili. If you've never made chili with beer before I recommend trying it, at least once! I used Negra Modelo here but you could also try a chocolate stout like Boatswain Chocolate Stout which is also vegan friendly. Whatever liquids you choose just be sure it equals about 2 cups.

The Ultimate Tempeh Chili

A great go to one pot, hearty, high protein chili to enjoy anytime the craving calls!

The Ultimate Tempeh Chili
The Ultimate Tempeh Chili

Ingredients
  • 1 8oz. package tempeh (I used this three grain tempeh), crumbled
  • 1 large onion, chopped
  • 3 large cloves garlic, minced
  • 2 tablespoons olive oil or 1/4 cup water, for sauteing
  • 1 can (15 oz.) red kidney beans, drained and rinsed
  • 1 can (15 oz.) pinto beans, drained and rinsed
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (28 oz.) diced fire roasted tomatoes and juices or 3 cups fresh diced tomatoes
  • 1 can (4 oz.) diced mild green chilies or 1 green bell pepper, cored, seeded and diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 - 1 teaspoon garlic powder, optional
  • 1/2 teaspoon chipotle powder, optional
  • Salt & freshly cracked pepper to taste
  • 1 bottle dark beer (Negra Modelo 1 bottle = 1 1/2 cups) plus 1/2 cup additional water or 2 cups water
  • scallions, for garnish

In a large dutch oven or stock pot, heat your oil/water over medium heat. Add onions, garlic, spices and tempeh and cook for 5 minutes stirring frequently. Add beans, tomatoes, green chili/bell pepper and dark beer/water, bring to a boil, reduce heat to low, partially cover and simmer for 1 hour.

This would be fantastic with a dollop of this Basic Cashew Sour Cream or Lime-Cilantro Cashew 'Sour Cream'. Serve with green onions and/or cilantro as well.

Serves 4 to 6.

Notes:

Mix the beans up however you like using all of one type or your favorite combination. If you would rather use only 2 cans of beans, that's great too! I like adding more ingredients as it makes the chili go further. If using your own cooked beans you'll need about 4 1/2 cups.

Feel free to use 2 packages tempeh instead of just 1. At times I like the extra dose of protein the tempeh adds and will double the amount making for an extra hearty chili. So good!

For those who do not care for the taste of tempeh, I recommend making this a day ahead so the flavors really meld into the tempeh masking most of its natural flavor. Or try using the three grain tempeh as its flavor is not as strong.

If you find you added to much heat from the chipotle, try adding a teaspoon or so of cocoa/cacao powder or organic sugar.

Enjoy!

Easy Spicy Mac n' Cheese

No frills here, just a simple mac n' cheese with a kick!

This is my second mac & cheese recipe to date. My other one, Winner! Mac and Cheese Bake, is supreme to any other's I have tried and is an easy nut based recipe. After much research, I found that vegan mac n' cheese recipes that win contests will undoubtedly contain cashews. Why you may ask. It's because cashews blend into a wonderful creamy texture making for a creamy sauce that can rival dairy based ones...and I agree! But I don't always want to use the high fat nut based recipes. In comes this one which is simply made from non-dairy milk, a little oil, flour, nutritional yeast and a few spices. That's it, and it came out great! I used almond milk for mine but you can opt for your favorite nut free non-dairy milk instead to make this nut free. This is a wonderful easy version that I can see being made again and again in my kitchen, adding steamed or roasted vegetables for variation. It may not win any contests (yet!), but for what it is it's another winner in my book. It hits the spot completely and I think you'll agree!

Easy Spicy Mac n' Cheese

Using these key ingredients will give this mac n' cheese lot's of flavor!

Nutritional yeast, aka 'nooch' or 'savoury yeast flakes', has a savory/umami characteristic. With its wonderful nutty, cheesy flavor it's perfect for cheesy flavored dishes. It's a great addition to your plant based diet in that it's a complete protein, low in fat and sodium. It also contains B vitamins, some are fortified with B-12 so be sure to seek out those brands. It's also If this is new to you, it's a flavor that you may have to adjust too. I've heard many do not like like it at first, but it will grow on you and you will find it to be a useful and tasty addition to your healthy diet. If your wondering what else you can do with nutritional yeast, you can find a few more ways to use it here: Winter Potato, White Bean & Kale Soup...Spicy Kale Pesto...Tofu Scrambles...Almond Parmesan...Vegetable Frittata...Cashew Ricotta Cheese. Lot's of ways to put nutritional yeast to use in your kitchen. You may even try sprinkling some on your popcorn!

Easy Spicy Mac n' Cheese

This is an easy, versatile mac n' cheese that will win hearts!

Easy Spicy Mac n' Cheese

Easy Spicy Mac n' Cheese

Ingredients
  • 8 oz. favorite pasta (I used quinoa pasta)
  • 1 1/4 cup unsweetened almond milk or your favorite unsweetened non-dairy milk
  • 2 tablespoons olive oil
  • 2 heaping tablespoons flour (spelt, rice, tapioca or all-purpose)
  • 1/2 cup nutritional yeast flakes
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chipotle powder
  • mineral salt, to taste

Cook your pasta according to package. Drain and place back in pot, set aside.

In a small/medium sauce pan, heat oil over medium heat, add flour and whisk to incorporate. Continue whisking and cook for 2 minutes. Add milk slowly, whisking constantly. Turn heat to low and cook until sauce thickens, about 8 minutes, stirring frequently. Remove from heat. Stir in nutritional yeast, salt, garlic powder, chili powder and chipotle powder. Stir until everything is incorporated and smooth again. Taste for flavor.

Add sauce to the pasta, toss well, add more milk as needed and serve right away.

Notes:

This recipe is just a template. Add as much of the salt and spices to suit your taste. You may even like to omit the chili and chipotle opting for a mild mac n' cheese. Or use either the chili or chipotle powder alone.

For the nutritional yeast, if using powder form reduce amount to about 1/4 cup. You can try playing around with the amount. I have used less, 1/4 - 1/3 cup, and still had a nice cheesy flavor. You may opt to start with less and add more to taste.

Toss in steamed or roasted vegetables of choice with the pasta...broccoli, brussel sprouts, sun-dried tomatoes, tomatoes, spinach, kale and corn are a few that come to mind that will work with the flavors. I'm sure I missed a few and would love to hear your suggestions in the comments below.

To reheat, add a small amount of milk and heat over low until warmed.

You may also like to top with some almond parmesan!

Enjoy!

Quinoa & White Bean Veggie Burger

It's burger time...

Quinoa & White Bean Veggie Burger

Quinoa & White Bean Veggie BurgerQuinoa & White Bean Veggie Burger
I haven't done a veggie burger in almost a year. It was time to add a new one to the list and this one is as delicious as it gets. These patties are loaded with protein and fiber as well as other beneficial nutrients, and they are very filling. As far as veggie burgers go this is fairly easy. I have to admit that I'm a pretty lazy cook and don't like a lot of steps. I prefer to spend as little time as possible preparing a meal as well as cleaning it up. Fyi, you can make this recipe even simpler by using a pre-made flour instead of processing oats like I did. The patties came out fantastic and held up great without falling apart, and they were not dry at all, nor were they mushy. The texture, taste and visual appeal all hit the mark. Once layered with all the extra goodies this burger was supreme and the best veggie burger I've ever had...am I biased...maybe, but these were divine! And, if you don't feel like having it on a bun, by all means top your veggie burger on a bed of fresh leafy greens with a squeeze of lemon, some avocado, salt and pepper...so good just like that!

Quinoa & White Bean Veggie Burger

I loaded this beauty up with leafy greens, slice of heirloom tomato, sliced red onion, whole grain mustard, mashed avocado and a nice drizzle of sriracha. Lot's of flavors going on and I loved it. As the saying goes, "Eat like you mean it!"

Quinoa & White Bean Veggie Burger

Ingredients (makes four patties)
  • 1/2 cup quinoa (I used tri-color)
  • 1 cup water
  • 1 teaspoon garlic powder
  • 3 teaspoons thyme, divided (oregano would be good too)
  • 1/2 - 1 teaspoon smoked paprika
  • 1/2 teaspoon ground chipotle pepper, optional
  • 1 can (15 oz.) white beans (I used cannellini), drained and rinsed
  • 1/2 cup corn, fresh or frozen (about 1/2 fresh corn off the cob)
  • 1/2 cup red bell pepper, finely diced (about 1/2 bell pepper)
  • 1/2 cup shallot, finely diced (about 1 medium) or red onion
  • juice of one lemon
  • 1/3 cup oat flour, or flour of choice
  • 1 Ener-G egg replacer or 1 flax egg (1 Tbs flaxseed meal + 3 Tbs water), optional*
  • mineral salt & cracked pepper, to taste
  • coconut or olive oil, to grease

To Serve:
  • tomato, sliced
  • leafy greens
  • avocado, sliced or mashed
  • red onion, sliced
  • whole grain or dijon mustard (hummus or vegan mayo is great too)
  • sriracha or Sriracha Cashew Cream (use the sriracha cream in place of mustard)
  • burger buns of choice

Start by making your flax egg or ener-g egg replacer and set aside. If baking in the oven, turn oven to 375 degrees F. (It's helpful to read instructions first before making the patties)

In a medium pot, bring water, quinoa, garlic powder and 1 teaspoon thyme to a boil. Cover, reduce heat and simmer for 15 minutes. Once done, remove cover and let set for 10 minutes.

While quinoa is cooking, prepare your corn, shallot and red pepper. Be sure to dice your onion and red pepper fairly fine, they should be about the same size as the corn kernels.

Next, mash your beans. I mashed about 3/4 of the beans leaving a quarter of the batch whole or somewhat whole.

Once quinoa is ready, add the quinoa to the beans along with the shallots, red pepper, corn, remaining 2 teaspoons thyme, smoked paprika and optional chipotle powder and lemon juice. Mix well. Add in the flour and egg replacer, mix well again. Season to taste with salt, pepper and more of the other spices. We all vary on how strong we like our spices...you can't take out but you can always put in.

Now to divide and make your patties. I like to pat my mixture into the bowl a little and divide it with a knife into 4 sections, making a plus sign if you will. Take each section and pack it tightly into a ball in the palm of your hands. It should be about the size of your hand. Flatten with your palms and place on hard surface. Cup the edges with your palms and tighten them in a bit and flatten the top to the desired size. Mine were about 1/2 inch thick by 3 1/2 - 4 inches.

Cook one of two ways:

In the oven at 375 degrees on a greased or parchment lined cookie sheet for 30 minutes, turning once after 15 minutes. I also added a sprinkle of himalayan salt to the top before baking.

OR

In a large skillet, heat 1 tablespoon coconut oil or olive oil over medium to medium high heat. Cook patties about 4 - 5 minutes on each side.

I cooked both ways and had no preference. They both held up well and cooked great. (pic shows skillet cooked)

Serve on bun or bed of leafy greens with choice of toppings!

Notes:

The patties can be made ahead of time and stored covered in the refrigerator for a couple days prior to cooking.

*I have a sneaky feeling that this can be made without the use of any egg replacer if you don't have it available. I have it here for good measure until I try without (in the comments you will see that it has been done). If you decide not to use an egg replacer, when adding the flour, just try adding two - three tablespoons of water instead if needed...the amount may depend on the flour you're using.

For mashed avocado, cut open avocado, remove seed and using a fork, mash the flesh right in the skin...it's like a bowl. Spread on bun for a great creamy condiment!

I hope this makes you want to get in the kitchen and cook.
I encourage you to make these soon and often...

Enjoy!

SWEET POTATO & QUINOA CHILI

Meals that can easily fit into your meal rotation are what I really love to share. As we can get a bit bored with the usual meals, it's nice to have more easy options that come together in a cinch. I love finding these simple dishes that truly work and can be made over and over again. That is what I share with you today. Nothing complicated in this recipe, everything is probably in your kitchen right now or you can find right away at your favorite grocery store. Eating vegan meals every day that are healthy and tasty is really easy once you get the hang of it. This chili has plenty of protein and essential fiber, vitamins and minerals while being flavorful and satisfying. I know you're going to love this one and find yourself making it often during the chili weather season. This lovely chili is a one pot meal that is ready in under an hour. Leftovers hold up extremely well too!

Bring on the chili...

Sweet Potato & Quinoa Chili

SWEET POTATO & QUINOA CHILI

Ingredients (serves 6)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) fire roasted diced tomatoes or 1 1/2 cup diced fresh tomatoes
  • 1 can (6 oz) tomato paste
  • 1 large sweet pototo, diced (with or without the skin...I leave the skin on)
  • 1 cup dry quinoa
  • 1 onion, diced
  • 5 - 6 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon dried oregano
  • a few dashes of garlic powder
  • a few dashes of onion powder
  • himalayan salt to taste
  • 4 cups (32 oz) water or vegetable broth, + more as needed
  • avocado, cilantro and/or diced onion, for garnish (optional)

In large pot or dutch oven, heat oil over medium heat. Add onions, cook until soft and they start to turn brown (about 7 - 10 minutes). Add garlic, cook for another minute or so. Add the tomato paste, chili powder, cumin, oregano, garlic powder and onion powder, cook for 2 more minutes stirring constantly. Add tomatoes, liquids, beans and sweet potato, stir until combined. Add quinoa, bring to a boil, reduce heat, cover slightly ajar and cook for 30 - 40 minutes, stirring occasionally. Chili is ready when sweet potatoes are tender. Add additional water if chili is too thick for your liking.

Serve with optional garnishes. You may also like to top it with this easy Cilantro Lime Cashew 'Sour Cream'.

Notes:

As with all recipes, adjust seasoning to taste. Add a 1/2 teaspoon or so chipotle powder for some added heat. Also, use whatever beans you prefer. You may even like to use one kind of bean instead of two.

Easy and delicious...Enjoy!

Street Tacos + Spanish Fried Quinoa & Black Bean Salad

Street Tacos + Spanish Fried Quinoa & Black Bean Salad

We have a full meal here, quite a bit going on and all so worth it. Funny how things work, part of this recipe came to be while I was at the gym. I was already planning on making the taco's and quinoa afterwards. And what do you know was on TV...it was Taco Nite on the cooking channel which inspired the black bean salad! They showed that as a veggie taco filler and so I have it here because it's so simple and pairs nicely with the quinoa. As a matter of fact, combined together the quinoa and black bean salad make a great 'Spanish Black Bean Quinoa Salad' to be used for leftovers!

The simple taco filling is pretty fantastic. We're using walnuts, mushrooms and a few spices to create a nut filling. If this is new to you, I think you are going to enjoy this recipe and will make it again and again. For the Mexican flavors use spices like cumin, chili powder, cayenne, coriander, paprika, cilantro and/or lime. You can also use this nut meat in burritos or on top of a taco salad. Or mix up the spices for an Italian flair using oregano, basil, marjoram, sun dried tomatoes, sage, thyme or rosemary and use it in lasagna or on top of spaghetti.

The thing I really love about all of these recipes together is that you can mix and match everything to your liking making tacos out of it all. I've also included the option of using lettuce leaves instead of corn tortilla's. Both ways are fantastic!

Maybe you'll prefer your tacos on the fresh side! These raw tacos are so delicious and refreshing. If you've never tried them I urge you to pick up some butter, romaine or other leafy lettuce and give this a try....you will not be disappointed. You may also opt to have your nut meat served at room temperature instead of warmed if you like. You could also double up on the leaves. If your interested in the nut meats, I also have a Rawsome Taco Salad w/ Lime Cilantro 'Sour Cream' that you may like to try as well. The Lime Cilantro Cashew 'Sour Cream' would be great along side this recipe as would this basic Cashew Sour Cream.

Don't forget the Tapatio! Really sets the tacos off nicely, even the lettuce wrapped ones.

Now let's get cooking and eat...

Street Tacos, Spanish Fried Quinoa & Black Bean Salad

Ingredients (serves 3)

Tacos
  • corn tortillas (2 per person)
  • butter, romaine or other leafy green lettuce leaves for raw taco wrap, optional
  • cilantro
  • lime wedges
  • pico de gallo
  • avocado slices
  • tapatio

Nut Meat for Tacos
  • 1 cup walnuts
  • 1 cup mushrooms (I used baby bellas)
  • 1 tablespoon tamari, soy sauce
  • 1 tablespoon cumin
  • 1/2 teaspoon chili powder

Pico de Gallo

  • 2 tomatoes, diced
  • 1/2 red onion, diced
  • 1 jalapeno, seeded and diced
  • cilantro, chopped
  • juice of 1 lime
  • himalayan salt to taste

Spanish Fried Quinoa
  • 1/2 onion, diced
  • 1 tablespoon olive or sesame oil
  • 1 cup quinoa, rinsed
  • 1 can (8 oz) tomato sauce or about 3/4 cup
  • 1 cup water or veggie broth (liquid total between water and tomato sauce should be 1 3/4 cup, at most)
  • 1/2 red bell pepper, diced
  • 1/2 orange bell pepper, diced
  • 1 jalapeno, seeded & diced
  • 1 teaspoon garlic powder
  • 1/2 - 1 teaspoon chili powder, optional
  • himalayan salt to taste
  • cilantro, chopped
  • (use any veggies you want in place of bell peppers...ie, peas, chopped carrots, chopped tomatoes, etc)

Black Bean Salad

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 red onion, diced
  • 2 corn off the cob, grilled (optional) or 1 can corn, drained or 1 cup frozen, thawed
  • 1/2 teaspoon or so cumin
  • himalayan salt to taste
  • juice of 1 lime
  • cilantro, to taste

First start with the corn, if roasting. I used my griddle on high and it took about 50 minutes with turning every so often to get the nice roasted look. Fresh corn right of the cob would be great too, it's sweet and tasty without  needing to be cooked. Roasting is optional.

Onto the Spanish fried quinoa. In medium size pan or skillet, heat oil over medium high heat, add onion and cook for two minutes, add quinoa and cook another five minutes or so stirring frequently until quinoa starts to get toasty and turn slightly golden. Add water, tomato sauce, bell pepper or veggies of choice, jalapeno, garlic powder, chili powder and salt, bring to a boil, cover, reduce heat and simmer for 20 minutes. When done, remove cover, stir in some chopped cilantro to taste, and let set for 15 minutes to absorb the rest of the liquids. Taste for seasonings before serving.

Next, put together the pico de gallo. Chop and dice your ingredients, combine everything in a small bowl with lime juice and salt to taste. Set aside to let the flavors mingle.

Now onto the black bean salad. In a medium size bowl, combine all the ingredients, taste for seasoning adding anything extra you might like.

Start the nut meat. Place all ingredients in food processor/blender and pulse until you have chunky crumbles. Don't over process or you will have a nut mushroom pate...which wouldn't be so bad but we want a crumbly effect here. :) This is optional but in a small sauce pan, heat the nut meat on low just until warm. You don't want to over heat or the mushrooms will cook too much, we just want it slightly warm. I find both ways, warm and room temp, to be just as appealing.

Warm your tortillas on the griddle or skillet for 30 seconds per side.

Finally, put your plates and tacos together as you wish! You may find that you end up combining the black bean salsa with the spanish fried quinoa. You may also find yourself making tacos out of both of those side dishes as well. However you craft your plate....

Winner! Mac & Cheese Bake

Vegan Mac & Cheese Bake

Winner, Winner....Mac & Cheese Dinner!

Vegan Mac & Cheese Bake

First off, let me say that this was a supreme hit with my 12 year old daughter who usually turns her nose up at almost everything I make! As a matter of fact, I hear her in the kitchen right now nibbling on the left overs...this is a good day. We have a winner here...this mac & cheese bake will hit the spot for the kids, just don't say a word about what's in it. ;) Now had I added veggies in the bake, it would not have passed which is why this is just a simple recipe. Feel free to add in veggies like broccoli, kale, etc...whatever you may usually add into a mac & cheese bake!

Vegan Mac & Cheese Bake

As for myself, I seriously could have sat there and ate this whole thing myself. I haven't had a mac & cheese bake in I don't know how long. The cheese is just great! I especially love the bread crumbs and the light dusting of smoked paprika I added on top of my portion. I paired mine with some sauteed Tuscan kale which was terrific!

Ingredients
  • 16 oz. package pasta of choice (I used rice penne pasta) (works with an 8oz package too)
  • paprika, garnish

For the bread crumb topping
  • two pieces of bread or 1 cup bread crumbs
  • tablespoon olive oil
  • twist or two of the salt grinder

Cheese Sauce
  • 1 1/2 cup raw cashews, preferably soaked for a 2 -3 hours (aides in digestion)
  • 1 3/4 cups water or unsweetened almond milk, or combo like I did
  • 1/3 cup nutritional yeast
  • juice of one large lemon or 1 tablespoon vinegar
  • 1 clove garlic
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon white miso
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt, or to taste
  • 1/4 to 1/2 teaspoon chili powder, to taste*
  • 1/8 teaspoon turmeric
  • dash of cayenne powder

    Preheat oven to 350 degrees.

Bring a large pot of water to a boil, cook your noodles al dente and set aside.

While waiting for the water to boil, start with your bread topping first. I toasted two pieces of bread we had on hand really well and processed them in the food processor until crumbly, a high speed blender will work too. Place the crumbs in a small bowl, drizzle with olive oil and a twist or two of the salt grinder, mix well and set aside. Quickly rinse the processor/blender bowl and move on to the cheese sauce.

For the cheese sauce: In food processor/blender, combine all of the cheese sauce ingredients except for about 1/2 of the water/milk and blend until creamy. Add remaining water/milk and blend again. Taste for flavor adding anything extra to suit your taste.

Once pasta is cooked and drained. Add pasta back to the pot it was cooked in, add the cheese sauce and combine well. It may seem like too much liquid but the pasta will take care of most of it.

In baking dish, pour mac & cheese and top with bread crumbs. Bake for 25 - 30 minutes, check after 15 minutes if crumbs are darkening too much for your liking, cover with foil.

When done, let cool about 10 minutes and serve. The sauce will thicken upon standing.

    * The chili pepper adds a really nice flavor without being too powerful. If your worried about the spiciness, especially for the little ones, I would suggest using the smaller amount, taste and add more if desired.

Notes: If you use a smaller baking dish or use ramekins, lessen the cooking time to 10 - 20 minutes depending on the size of dish you use.

    Enjoy!

Why I ♥ this cheese so much is not only does it taste fantastic and its easy to make, but also because not one cow was harmed, or had their baby taken away, or just simply had to live a life of misery in order to satisfy a taste we have come accustomed to without even realizing how these animals are handled, especially through factory farming. That in itself makes all dairy products undesirable to me. I began my vegan journey for health reasons and soon found out just how unpleasant the meat and dairy industry really is. It is not a question of whether it's wrong or right to consume animals and their products...that depends on your circumstances. But I do believe that in this day and age we live in we simply do not need them to survive, and we definitely do not need to factory farm them the way it is being done.

Veganism for me is liberation for ALL sentient beings! And it most certainly starts with my fork. :)
