Everyday Oatmeal

Today I share with you my go-to oatmeal. It's quick and flavorful! On its own, oatmeal is nothing to get excited about. It needs help with warm spices, sweet and/or tart fruits and some crunchy nuts & seeds. Add a drizzle of pure maple syrup and splash of almond milk for the perfect finishing touch. I love oatmeal all year long, but during the fall\winter I especially eat this on a regular basis. It warms me up, fills that morning hunger, supplies me with good carbohydrates and keeps me going for a good part of the day. 

Everyday Oatmeal: The Essentials

My everyday oatmeal always consists of cinnamon, cardamom, maple syrup and almond milk...these are the essential flavor boosters. The rest of the ingredients will be mixed and matched depending on what I have on hand.

Cinnamon and cardamom are warming spices and both hold health benefits. They are delicious together and will add a ton of flavor to plain oatmeal!

Pure maple syrup is my sweetener of choice and contains a good dose of manganese and zinc.

For the milk, I use unsweetened almond milk but you can use your favorite non-dairy milk. Most non-dairy milks are low in calories, fat and are fortified with important vitamins and minerals (even more so than dairy milk) like calcium, vitamin D, B-12 and E, manganese, potassium, copper and selenium.

The oats can be whatever you prefer. Lately I've been using quick oats, it's what I've been baking with and have tons on hand. You can use rolled or steel cut oats too, just cook according to the package directions.

I usually always add in some sort of fruit, whether dry or not. Usually its dried fruit since I always have some on hand in the pantry or refrigerator. I prefer unsweetened dried fruit like raisins, currants, barberries, blueberries and cranberries. Chopped dates, apricots and cherries are also great. I'm loving the addition of the barberries I picked up awhile back, they add a tartness contrasting the sweetness of the other dried fruits. I've come to learn that barberries are higher in anti-oxidants than dried blueberries, cranberries, goji berries and even pomegranates! These little tart fruits can be found in Middle Eastern grocery stores (you can also order them online) and hold up well in the pantry or refrigerator. When using fresh fruits, I may use blueberries, sliced bananas or apples.

The addition of nuts & seeds will add protein and a nice crunch. Many nuts & seeds contain essential omegas that are heart healthy making them another good reason to add a small handful. You can use any combo of walnuts, pepitas (pumpkin seeds), almonds, hemp hearts, chia seeds and pecans.

It's the perfect everyday oatmeal to get me going, or end my day! Sometimes I have oatmeal for dinner. ♥

Everyday Oatmeal

EVERYDAY OATMEAL

Ingredients
  • 3/4 cup quick oats 
  • 1 1/4 cup water
  • 1/2 cup unsweetened almond milk, divided
  • 1 - 2 tablespoons pure maple syrup
  • 1/4 heaping teaspoon cinnamon
  • 1/8 teaspoon cardamom
  • small handful mixed nuts (I used walnuts and pepitas)
  • small handful dried or fresh fruit ( I used currants and barberries)

Bring water to a boil in a small saucepan. Stir in 3/4 cup oats, reduce heat to medium and cook for 1 1/2 minutes. Add 1/4 cup milk and cook another 30 seconds. Remove from heat, cover and let stand for 2 to 3 minutes. 

Place oatmeal in your serving bowl, top with cinnamon, cardamom, nuts, seeds and berries. Drizzle maple syrup over top and some of the remaining milk. Give a good stir and enjoy!

It tastes great with a morning cup of coffee, green tea or lemon water.

Notes: 

Give or take on both the oatmeal and water when cooking, using more or less as needed.

Use rolled or steel cut oats if you prefer, cook according to package instructions. 

If you don't like the flavor of maple, use coconut nectar or pure cane brown sugar. 

Dried fruits you might like to use...cranberries, blueberries, goji berries, raisins, currants, barberries, chopped dates, apricots and cherries. Fresh fruits can be blueberries, apples and bananas.

Nuts and seeds you might like to use are almonds, walnuts, pecans, pepitas, hemp hearts and chia seeds.

This salad featuring the king of leafy greens has been a perfect match for my lighter fare cravings. It's sweet with the cranberries and bell pepper, a bit citrusy from the dressing and crunchy from the carrots, kale and sunflower seeds. Everything adds up to nice flavor and texture. My favorite way to enjoy a kale salad is to let the kale marinate with the dressing for about an hour. This will help relax the kale and take some of the bitterness away. Making your salad this way makes for a great pack-n-go lunch option. Your salad will be softened and ready by the time lunch comes. When your looking to add some freshness into your diet, I think you'll find this to be a great inspiration!

If you don't already know, KALE is a power house of nutrients. It's loaded with anti-oxidants and anti-inflammatory support as well as being rich in calcium, iron and vitamin K, A & C. It aids in the body's detoxifying process and offers cardiovascular support. But even with all this goodness, you may have heard that too much kale is not so good. That is true for some. Kale is a green that may be best consumed moderately, especially for those with kidney and gallbladder issues because of the high amounts of oxalates. If you're in good health, kale can be consumed on a fairly regular basis without much concern. Look for organic kale whenever possible. The 'dirty dozen' list has been revised to be the 'dirty dozen plus' with kale/collards greens coming in at #16 of produce with highest amounts of pesticide residue.

Ingredients
  • 1 bunch kale, julienned
  • 1/2 cup shredded carrots
  • 1 red bell pepper, julienned
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds (toasted or raw)
  • 1/4 cup hemp hearts
Dressing
  • 3 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 -2 teaspoons pure maple syrup
  • 1 teaspoon dijon mustard, optional

Prepare your vegetables and gather your cranberries and seeds. 

Mix kale, carrots, bell peppers and dressing together. Let set for about an hour at room temp or in the refrigerator (this will soften the kale nicely and reduce the bitterness). Serve in individual bowls topped with cranberries and seeds. If you don't have time to let the kale marinate with the dressing, the salad will still be great! 

Serves 2

Notes:

Use orange, lemon, lime and/or grapefruit as your citrus juice. Mix and match your citrus flavors using whatever you have on hand or is available.

Make this a creamy dressing by adding 1 - 2 tablespoon tahini when mixing the dressing.

The dijon is optional, I found that I preferred it with a small amount. Try it both ways and see what you think.

I have some granola inspiration to share with you today! While at the store a few weeks ago, I saw a package of granola from La Brea Bakery and loved that it had big chunks. I set out to recreate that in my kitchen. Initially I wanted to make a mixed fruit granola, but seeing that I had some very ripe bananas that needed to be used up I thought I'd put them into a granola with a nut butter instead. We'll save the fruit granola for another time. This combination turned out great. Not too sweet, chunky like I wanted and the nut butter will add a good amount of protein. This is a perfect snacking granola! Great to have on hand at home or pack some up and take it with on the go. You can also break it up a bit more and top it on non-dairy ice cream or yogurt. You may even like to fill a bowl full, add some milk and enjoy. However you like your granola, this will be a great addition to your granola addiction!

I used almond butter here but you can use any natural nut butter you like. The bananas, the riper the better...the more ripe they are the sweeter they'll be.

Spread on 1 extra large baking sheet or 2 smaller ones. In the picture above I spread the granola close together. I did one sheet this way and another loosely spread out (first photo). Both batches worked great but the loosely spread granola baked a little faster.

Ingredients
  • 4 cups rolled oats
  • 1 cup almonds
  • 1/2 cup pepitas (pumpkin seeds)
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 3/4 cup almond or peanut butter (I used crunchy almond butter)
  • 2 small ripe bananas, mashed (about 1 cup)
  • 2/3 cup pure maple syrup
  • 1/4 cup coconut oil, optional
  • 2 teaspoons vanilla extract

Preheat oven to 300 degrees F.

In a large bowl, mix together the oats, almonds, pepitas, cinnamon and salt.

Warm your coconut oil and maple syrup, combine with vanilla extract. Mash your bananas and measure your nut butter. Combine the wet ingredients with the oat mixture. Toss and mix to coat well.

Spread mixture evenly on a lined or lightly greased baking sheet (I used two baking sheets). You can either lightly compact the mixture or loosely spread it out a bit. If compacting, you'll want to mix the granola when rotating after 30 minutes.

Bake for 30 minutes. Turn and rotate sheet/sheets, bake an additional 25 - 30 minutes. Keep an eye towards the end so it doesn't over brown (ovens run differently). Remove from oven, granola will be somewhat soft at first. Let cool for 15 minutes, break up into chunks, especially the center part if you've compacted the mixture. Let granola cool completely to harden.

Notes:

Change up the nuts using peanuts, walnuts or pecan pieces. Use sunflower seeds in place of the pepitas.

You will most likely do just as well without any oil. If you'd like to reduce the oil, try using only 2 tablespoons. I like the flavor and addition of the coconut oil for myself.

Once cooled, if you still find your granola to not be as crunchy as you might like, bake again at 300 degrees for about 10 minutes, keep an eye so it doesn't over brown.

This granola needs to cook low and slow. My first batch I baked at 325 degrees F. for 40 minutes but it still needed extra baking time after cooling to become crunchy. I lowered the temp and added a bit more time. Be sure to watch it towards the end so it doesn't become burnt, especially if you've spread it loosely on the baking sheet.

The 1/2 teaspoon of cinnamon gives a very subtle flavor, add another 1/2 teaspoon for a more enhanced cinnamon flavor.

If you happen to have both rolled and quick oats on hand, try using 2 - 3 cups rolled oats and 1 -2 cups of quick oats (use whatever combo equals 4 cups with at least 2 cups rolled oats). This will also help to make nice clusters.

    Get ready for a different flavor sensation! It's a nice balance of sweet, a bit of tang and curry flavor that I just can't get enough of. If you love roasted cauliflower and the combination of ingredients in this salad, I have no doubt you will find this to be a great addition to your meal rotations.

    This recipe came about from a recent trip to a small grocery store near me. I picked up a version they had and thought it was good enough to recreate for the recipe collection. The quinoa is my own addition, I wanted to add some protein and extra fullness to the salad. The remaining ingredients are almost the same. I did have to guess at the dressing but it came out perfect, even better than theirs I think...much less oily. This can easily be a side salad or a full meal. Great for to-go lunches as well, can be served at room temp or chilled.

    Ingredients
    • 1/2 cup dried quinoa
    • 1 cup water (or just under)
    • 1 large head of cauliflower
    • 1 medium apple (I used Fuji), cored and diced
    • 1/2 cup golden raisins
    • 1/3 cup shredded coconut

    Dressing
    • 3 tablespoons grapeseed or olive oil
    • 2 - 3 tablespoons apple cider vinegar 
    • 1 tablespoon dijon mustard
    • 1 tablespoon pure maple syrup
    • 1 tablespoon lemon or orange juice
    • 1 tablespoon water
    • 2 teaspoons curry powder
    • mineral salt & fresh cracked pepper, to taste

    Preheat oven to 425 degrees F. Cut cauliflower into florets. Lay in a single layer on a large rimmed baking sheet. Add a drizzle of oil and toss to coat. Roast in the oven for 40 minutes, mixing the cauliflower around half way through. Remove from oven, let cool. 

    Rinse your quinoa using a fine mesh sieve (honestly, I usually skip this part but have it here for good measure. Don't feel you have to do it but you may find that you prefer it that way.) In a medium pot/pan, add quinoa and water, bring to a boil, cover, reduce heat to low and simmer for 15 minutes. Once done, turn heat off, uncover and let rest for 15 minutes. Fluff with a fork and set aside.

    In a small bowl, mix together the ingredients for the dressing. Set aside to let the flavors develop. Taste for seasoning adding anything extra you might like. 

    In a large mixing bowl, combine quinoa, cauliflower, apple, raisins, shredded coconut and dressing, toss well to coat. 

    Serve at room temperature or chilled.

    Serves 4

    Notes:

    If you know and love the Orange Muscat Champagne Vinegar from Trader Joe's, or elsewhere, this is a great place to use it! Use it in place of the apple cider vinegar.

    Sub in a tablespoon or so of water for the oil. Try using 1 tablespoon oil and 2 - 3 tablespoons water.

    Feel free to use regular raisins or currants. Cranberries may even be a nice change up.

    For my quinoa, I buy one bag each of white and tri-color and mix them together creating a nice blend of color and texture.

    Enjoy this flavor combination, it's delicious!

     I've been very busy since my last post updating some older recipe that desperately needed to be revisited, not only for the pictures but to update and streamline the ingredients and instructions.     I've been doing a lot of snack and dessert type recipes lately and have been loving every minute of it. Inspired by my Chocolate Chai Popcorn, I decided to try roasted almonds with this flavorful mix and it worked great. The flavor of cinnamon, cardamom, ginger, clove with some black pepper spice all lightly wrapped with a hint of cocoa. It's a fun and delicious flavor! Almonds are an alkalizing nut and eating just 9 almonds a day will provide you with all the vitamin E you need for the day. They're also a great source of magnesium, potassium, copper and fiber. These flavored almonds make for quite an addicting but healthy little snack that I'm happy to share with you today. I love that they travel well too. Bag or bottle some up in a mason jar and take them with you for the day. They even make for great gift ideas for special holidays or just because.     Ingredients
    • 3 cups raw almonds
    • 1/4 cup pure maple syrup
    • 2 teaspoons vanilla extract, optional
    • 1 heaping teaspoon cocoa powder
    • 1 heaping teaspoon cinnamon
    • 1 heaping teaspoon cardamom
    • 1 heaping teaspoon ginger
    • 1/2 teaspoon cloves
    • 1/4 - 1/2 teaspoon black pepper
    • a few pinches of mineral salt

    Preheat oven to 350.

    In a large mixing bowl, add almonds, maple syrup, vanilla and spices, mix well to coat. On a large baking sheet lined with parchment paper or lightly oiled, spread almonds, syrup and all, in a single layer, it's ok if they're touching each other. Bake on center rake for 20 - 22 minutes, shuffling the almonds around once after 10 minutes. Remove from oven, sprinkle with mineral salt and let cool to harden. They may clump together a bit while cooling but will easily come apart.

    Store in air tight container for up to a month.

    I do love a good sandwich every now and then. And one with sweet crisp apple, warmed nut butter, hints of cinnamon and maple are right up my alley! This sandwich includes plenty of protein, fiber and other good nutritional values to keep us running and happy. I set out to put this into the collection as a nice twist on the old classic PB & J. It could also go as a PB & B if you have some bananas on hand. How great would that be? Very I think! I happen to love versatility when preparing a meal and decided to showcase it here. I've used different breads, mainly because of the various tastes we have in our home. I love the fruit, nut and seed loaf while my daughter prefers a simpler maple oat loaf. Both breads are wonderful giving their own special flavor to the sandwich. I love what the fruit and nut loaf adds to this sandwich and recommend finding one, it really adds a nice touch and pairs perfectly with the ingredients. I used fuji apples as they are our favorites. I think the tart green apples would be great here too. I also varied up the nut butters. I love my almond butter and my daughter loves her peanut butter. So it goes, we have variations and each one of us had our own special version to suit us perfectly... and it was delicious! I encourage you to use your favorite of everything here, this is more of a template than a recipe. You may also consider adding some Coconut Bacon to the middle of this sandwich.     Ingredients
    • 2 apples of choice 
    • nut butter of choice
    • cinnamon
    • maple syrup
    • 4 slices bread of choice 
    • coconut oil

    Wash your apples and slice in half. Using a teaspoon, scoop out the core. Remove any area from the stem and calyx (bottom indentation) of the apple. Place sliced apple half in standing position and cut into 1/4 inch slices. You should get 3 or 4 slices per half, depending on the size of your apple. Cut the slices in half, vertically.

    Add a nice layer of nut butter to both slices of your sandwich, layer one slice with apples, sprinkle with cinnamon and add a light drizzle of maple syrup over top. Place top half on sandwich.

    Grease your griddle/skillet with coconut oil and heat over medium. You can also add a very light coating of coconut oil to the top of your bread slice using a silicon brush, or whatever method you prefer. Place sandwich, oil side down, and cook for about 2 - 4 minutes. Brush top half lightly with coconut oil, flip and cook another 2 - 4 minutes. Remove from heat and serve with any remaining fresh apple slices on the side.

    Serves two.

    Notes:

    This would be great with a little Coconut Bacon in the middle.

    Make gluten free by using your favorite gluten free bread.

    This sandwich can be breakfast, lunch or dinner.

    TEMPEH CHOW MEIN

    Tempeh Chow Mein

    This recipe has been on the back burner for a while. I shared a version of this on Instagram back in January of this year and meant to put together a recipe sooner. I find myself getting side tracked often as a food blogger. There are seriously 1000+ recipes that I have in mind and sometimes can't figure which one to do next. All in due time! Fortunately, the time has come and I'm happy to add this to the recipe collection. It's a classic dish and a very welcome addition! It's absolutely delicious and I polished the whole thing off by the end of the day...yes, it was lunch and dinner...no leftovers. ;) You can keep this simple or go all out with a few extra vegetables if you like. If you're not a fan of tempeh, omit it altogether or add some cubed tofu instead. This simple chow mein can be ready for the dinner table in less than 30 minutes for your enjoyment.

    Tempeh Chow Mein

    For the tempeh, I used this three grain tempeh that is available locally. Tempeh is a great source of protein for the plant based eater. It contains 19 grams of protein per serving (4 oz.) and 13 grams of fiber. It's also an excellent source of manganese, copper, phosphorus and vitamin B2. If you can't find tempeh, this recipe will do just fine without it. For me, I have added the tempeh primarily for protein purposes but I do love the flavor as well. Tofu would work here too, just be sure to use extra firm so it doesn't fall apart while cooking. Or omit the tempeh/tofu altogether and make yourself a nice protein shake or smoothie later. 

    The noodles I chose are a Japanese version of Chinese egg noodles, but without the eggs. Chuka soba noodles are great for soups, stir fry’s and cold noodles salads. They cook up fast, about 4 minutes, making things go a little quicker. They shouldn't be confused with the Japanese soba noodles that are tan colored, straight and made from buckwheat flour. Ingredients for the shuka soba noodles are: wheat, water, salt & turmeric. Those looking to go gluten free should use rice noodles or 100% soba noodles. If you're not gluten intolerant feel free to use any thin spaghetti noodles or vegan chow mein noodles. The chuka soba and chow mein noodles can be found in the Asian section of your grocery store, at your local Asian grocery stores or purchased online.

    Tempeh Chow Mein

    The vegetables here can vary to suit your taste. You can add in bean sprouts, sliced shitake mushrooms, green onions, broccoli florets, etc. Lots of cabbage is a must for me. I could just as well use a whole head of cabbage in this recipe but decided to only call for 1/2 head. Feel free to adjust any of the ingredients to your liking.

    Super easy to put together! Cook your noodles, rinse and set aside.

     Next, start your stir fry by first adding the tempeh, celery, onion and some of the sauce. Cook a few minutes. Then add the carrots and cabbage, cook until everything is softened, add the noodles, remaining sauce and toss well. Continue cooking until noodles are warmed through amd serve.

    Once served, I topped with sliced scallions, red pepper flakes and cilantro. I'm a huge fan of these last ingredients but feel free to omit anything you don't care for. Toasted sesame seeds would be a great topper too!

    Ingredients
    • 8 oz. package chow mein noodles or thin spaghetti noodles
    • 2 (8oz.) packages tempeh
    • 1 tablespoon sesame or grapeseed oil
    • 1/2 head green cabbage (about 4 cups), shredded
    • 1 large celery stalk, sliced diagonally
    • 1 large carrot, peeled and sliced diagonally
    • 1/2 onion, sliced
    Sauce
    • 1/4 cup tamari or soy sauce
    • 2 tablespoons maple syrup
    • 2 tablespoons water
    • 1 tablespoon rice wine vinegar, optional
    • 1- 2 cloves garlic, minced or 1 teaspoon garlic powder
    • 1 inch knob of ginger, grated or 1/2 teaspoon ground ginger
    • mineral salt and pepper to taste (white pepper would be great here)

    If using chuka soba or chow mein noodles, bring a pot of water to a boil, add noodles, reduce heat to medium and cook for 4 minutes. Drain, rinse and set aside. If using other noodles, cook as directed on package.

    In a small bowl, whisk together the sauce, set aside.

    In a large wok, heat olive oil over medium to medium-high heat, add tempeh, crumbling it between your fingers, onion and celery, cook 1 minute. Add a couple tablespoons of sauce mixture, continue to cook for another 2 -3 minutes. Add in cabbage and carrot, stir to mix, cover and cook another 5 - 7minutes, stirring occasionally until cabbage has shrunk down and softened. Add in noodles and remaining sauce, toss to coat, continue cooking until noodles are warmed through. Add additional tamari or other seasoning to taste.

    Serve warm topped with scallions, red pepper flakes and cilantro. Sesame seeds and/or chili sauce would also be great!

    Serves four.

    Notes:

    Feel free to use only one package of tempeh instead of two. The two packages does serve four but one package will still add a fair amount of protein to each serving.

    I love the added sweet from the maple syrup using 2 tablespoons. Feel free to use 1 tablespoon instead of 2 and add more vinegar or tamari in its place.

    Light, fresh foods are my inspiration these days. Fresh is back in my kitchen as I crave the lighter fare with the changing season. Today I share with you this Chinese chop salad which is meant to be enjoyed in abundance! It will make quite a bit so you can either graze on it throughout the day or simply have some, saving the rest for later if not making for a group, or simply half the recipe. It's meant to be versatile as well, using whatever ingredients you prefer or have on hand. I have used red and green cabbage along with romaine lettuce here. Feel free to use any combination if you don't want to use all three. The vegetables are in abundance too, I didn't add any carrots so that my be something you might like to add to yours. I have also included lightly grilled tofu on top of my salad but this is an option. The dressing will add a little extra protein to the salad. It's another peanut dressing. What can I say?! I love the creaminess as well as the little extra protein and nutrition it gives...and this one is a little different from the others. I used quite a bit of vinegar in this one giving it a nice bright zestiness. If your not a fan of vinegar, like I once was, you'll see a substitution for you in the notes. As Tim Gunn from Project Runway liked to say, 'Make it work!'...that's exactly how we'll approach this salad with the various tastes we all have. Hope you'll enjoy it as much as I did.     Chinese Chop Salad + Peanut Sesame Dressing

    Ingredients
    • 1 small head green, savoy or napa cabbage, sliced
    • 1 head romaine lettuce, sliced
    • 1/3 head red cabbage, sliced
    • 1/2 red bell pepper, julienned
    • 1/2 yellow bell pepper, julienned
    • 2 Persian cucumbers or 1 small cucumber, halved and thinly sliced
    • 2 stalks of celery, thinly sliced 
    • 1/2 cup chopped cilantro, loosely packed
    • 2 tablespoons black sesame seeds, garnish
    • small handful slivered almonds, garnish
    • 8 oz. plain or grilled firm or extra firm tofu, cubed (optional)
    Peanut Sesame Dressing
    • 1/2 cup apple cider or rice wine vinegar
    • 3 tablespoons natural peanut or almond butter
    • 1 tablespoon pure maple syrup (2 if using raw almond butter)
    • 2 teaspoons sesame or toasted sesame oil
    • 1/2 inch knob ginger, grated or minced
    • 1 teaspoon sriracha, optional
    • pinch of pink salt or splash of tamari

    In a small bowl, mix your dressing and set aside letting the flavors develop. Taste before serving adding anything you feel it needs.

    Prepare your vegetables, place in a large bowl. Here you can either add the dressing and toss to coat then serve in individual dishes. OR, you can toss and serve adding a drizzle of dressing over top once plated. Top with tofu, sesame seeds and slivered almonds.

    Serves 4.

    Notes:

    Use whatever ingredients you like here. There is plenty so if you don't have access to a few of the items you can sub in something else or omit it all together. Make this a rainbow salad by adding in some julienned or grated carrots. You may like to add in some small broccoli florets, sliced scallions or zucchini too.

    If you don't care for vinegar, I would suggest replacing the 1/3 cup of  vinegar with water or unsweetened almond milk and maybe a splash of vinegar for the extra zest it gives. This dressing is meant to be somewhat on the thin side. If you prefer it thicker add a bit more nut butter, to thin add a tad more of the liquids.

    For the tofu, you can use uncooked or grilled. I lightly cooked mine using sesame seed oil and a cast iron griddle, about 6 minutes on each side. But it is perfectly fine with tofu from the package, just press if needed and cube it.     Strawberry Chocolate Protein Milkshake

    Its strawberry season here in California signaling that spring is right around the corner. It's one of my favorite times of year, next to fall. I've been buying strawberries like crazy, freezing them just for times like these when I feel like making a shake. I don't about you but spring happens to be the season when I naturally tend to start eating a bit lighter, making shakes and smoothies a perfect way to get in a quick meal or healthy dessert. Full of good things in this milkshake, you can be sure you're giving your body lots of L-O-V-E...because you deserve it! 

    Strawberry Chocolate Milkshake

    Strawberries are full of anti-oxidants and anti-inflammatory nutrients. These sweet ruby red fruits hold three major benefits to your health: they have the ability to protect and support the cardiovascular system, regulate blood sugar helping to prevent diabetes and protect certain forms of cancer from developing. They are also a rich source of vitamin C, manganese and fiber! It is recommeded that you eat at least one cup of strawberries for the full benefit of their nutritiousness. 

    Strawberry Chocolate Milkshake

    Cocoa is full of powerful anti-oxidants that may help prevent heart disease, cancer and aging effects. It can also be beneficial as an antidepressant with its natural 'happy' opiate effects giving you a feeling of elation. I have actually felt this myself after having a shake made with cocoa powder....feels pretty good! It is recommended that you purchase your cocoa/cacao powder 'organic' as it's less processed and contains more of the beneficial nutrients to keep you at your best. Just a note that cocoa is not included on the World's Healthiest Food List but is still beneficial and can be enjoyed in moderation.

    Ingredients
    • 1 cup frozen strawberries
    • 1 cup unsweetened almond milk
    • 1 1/2 tablespoons cocoa/cacao powder
    • 1 - 2 tablespoons pure maple syrup or liquid sweetener of choice
    • 1 teaspoon vanilla extract
    • 1 scoop protein powder, optional 

    optional toppings
    • shredded coconut
    • cacao nibs

    Place ingredients in blender and blend until combined. Top with optional toppings. Serves one.

    Notes:

    Depending on the size or cut of your strawberries, you may need to add a little extra milk. Sometimes I have to add an extra 1/4 -1/2 cup.

    Adjust the cocoa/cacao powder to suit your taste or protein powder. If using chocolate protein powder you may want to use less cocoa/cacao powder. Same goes for the sweetener. I use a Garden of Life Raw Protein Powder at the moment that doesn't contain any sweetener so I added a bit to mine (sometimes I use hemp protein powder instead). If your strawberries are super sweet you may not need any extra sweetener. With all this in mind, adjust ingredients depending on your circumstances.
